Reposado tequila is becoming increasingly popular, and for good reason. It offers a unique flavor that sits between the sharpness of unaged tequila and the deep woodiness of long-aged varieties. But here's something interesting: the term "reposado" for tequila is relatively new. It was only officially recognized in 1974, less than 50 years ago. Despite its young official age, reposado tequila has quickly become a favorite among both tequila experts and casual drinkers.

What is Reposado Tequila?
The word "reposado" in Spanish means "rested." This tells us something important about how this type of tequila is made. After the tequila is distilled, it's put into oak barrels to rest for a while. This resting period lasts at least two months, but no more than a year.
During this time in the barrel, the tequila changes. It takes on a golden color and picks up flavors from the wood. This aging process is what makes reposado tequila different from other types.

Blanco:
Aging Time: Unaged or less than 2 months

How Is Reposado Tequila Made?
Reposado tequila starts its life like any other tequila. Here's how it's made:
Harvesting:
Workers, called jimadores, harvest ripe blue agave plants.
Cooking:
The agave hearts are cooked to turn their starches into sugars.
Crushing:
The cooked agave is crushed to extract its juices.
Fermenting:
Yeast is added to the agave juice to create alcohol.
Distilling:
The fermented liquid is distilled, usually twice, to increase its alcohol content.
What makes reposado special is what happens next. The clear, distilled tequila is poured into oak barrels to rest. Most makers use barrels that once held other spirits like bourbon or cognac. This adds subtle flavors to the tequila.
The type of barrel used affects the final taste. American oak gives vanilla and coconut notes. French oak adds spicy and fruity flavors. Some makers use both types of barrels to create complex flavors.
During aging, the tequila absorbs compounds from the wood. It also loses some of its harsher alcoholic bite. The result is a smoother, more rounded flavor that still keeps the essence of agave.

1. Reposado Old Fashioned
2 oz reposado tequila
1/4 oz agave nectar
2 dashes Angostura bitters
Orange peel for garnish
Combine ingredients in a mixing glass with ice. Stir for 30 seconds. Strain into a rocks glass over a large ice cube. Express orange peel oils over the drink and use as garnish.
2. Reposado Paloma
2 oz reposado tequila
1/2 oz fresh lime juice
3 oz grapefruit soda
